Just came across a digital adapter, Motorola DCT700, that I used in the past. Will this adapter still work with todays FIOS TV?

It will work and you should get channels 0-49 - once you activate it and you get all of your channels, then It gets added to your bill - you can do a chat or a call, and just tell them you need help activating a set top box and give them the serial number.
Shouldn't they get all SD channels?
Try plugging it in. If you have used it before, should still be on the account.
I have one that I used both with STB and now with Quantum as it is not a MOCA device.
