Can iCloud be set up on iPhone from iPod backup?

I have an iPod touch 4g now and I have an iCloud backup. I am getting an iPhone 5 soon and want everything to transfer through iCloud. I'm pretty sure it will transfer to the iPhone, but my question is when I am at the Verizon store and they are setting up the iPhone, do they do anything with the Setup Assistant? I want to be able to "Restore from iCloud Backup", not "Set up as new iPhone". I am really fluent with Apple products, but I don't really understand what they actually do while activating the iPhone. Can somebody help me with this?
