Restore

My iPhone died. I've been sent a refurbished phone as part of the warranty program. I'm trying to be activated it now. It would not restore it immediately ( as the instructions stated) because the software on the "new" refurbished phone was not up-to-date. I'm updating the software on the new phone now but how do I proceed then to restore the phone fully?

I moved the Sim card to the new device. I follow the instructions. My Mac was trying to restore it but said that the software was out of date and had to be updated as a new iphone before it could be restored ( apparently the refurbished phone that was sent to me did not have up-to-date software and that is causing the problem). Not clear about the steps since this was not Not covered by the online instructions. The data is backed up on iTunes.
