You will need to open Go Messaging each time you want to send a text message. Clicking on the stock messaging app (what you are calling the "default app") does just that...opens the stock messaging app. You can hide the stock messaging icon by long-pressing on it and dragging it to the trashcan that appears at the bottom of the screen.
Also, you need to go into the settings of the stock messaging app and disable all notifications. Otherwise, BOTH apps will go off when you get a message.
And yes, Go Messaging does allow you to select notification sounds, but I can't remember if it allows you to select ringtones as messaging alerts. However, there is an app called Ringdroid that wll allow you to set ringtones as notifications. However, it's been my experience that ringtones are going to be pretty long, longer than necessary for use as a mssage alert. And there sould be lots of notification tones in that Incredible.
