What's the best way to back up all my apps so when I switch replacement phone they will be there?

If I were you, I would just load them fresh from the market. It's a lot of work, but it rules out existing apps with issues or issues caused by the transfer.

Otherwise, ASTRO File Manager is an app I use to back up apps. I think most people use AppBrain.

The "best" way is Titanium Backup, but you probably don't have that option available. Before I took my phone to the dentist, I used ASTRO file manager to back up the Apps themselves and for many apps there's a built in backup/restore function for application settings, so I used those. Anything without those, I just set it back up after reinstalling.
