I dont want maps to give me my verbal directions over bluetooth but I dont want turn off bluetooth as I still want to take my calls over my bluetooth when I am driving.

Funny, you should not want that. I want the exact opposite. My car radio and phone will not allow the Bluetooth to interrupt the radio to give voice directions.

Lets see if we can stop Google Maps from giving you those verbal directions! The steps and capabilities may be different between phones. Which make/model do you have?
