I updated my phone to 2.1 using the method posted on Engadget. ( http://www.engadget.com/2010/03/31/droid-mercifully-gets-a-manual-2-1-update-option/ ). Did this void my warranty? I'm worried because I know that rooting your phone will void the warranty and I don't know if this is the same thing or not.

No, there is absolutely NO difference, at all, in any way... (You will still get any future updates that Verizon officially releases.) I doubt a forensic investigation of the phone could tell how you updated it... The OTA update simply downloads the update.zip file to the root of the SD card and does a "Reboot Recovery" on it's own so you don't have to hold the "X" key... It's as simple as that... The OTA update is installed exactly the same way, it just "presses a few keys" automatically for you.
If it were not the "official" release that you downloaded, it would not have been signed properly, and you would have had to have had root access and one of the alternative boot loaders such as clockworkmod or SirPsycho recovery installed to flash the unsigned ROM.

No, that is the official ROM image that has been released. There is nothing about the image that would void the phone.
It puts your phone in exactly the same state as if you had been one of the first to have the update pushed to you.

Hypothetically, when 2.1.1 comes out, would I still be able to get the OTA update or did this disable the OTA updates?

I just put the 2.1 update on my phone. I like the changes. The voice entry is great!!!
Live wall paper is cool, but not that useful ( probably a waste of battery )
The pinch & Zoom works great in Browser, Google Maps, and Google Earth.
So far everything seem to work correctly....
