Change them...how? And notifications for what? Generally, you would go into the specific app you want to change the notifications for (calls, texting, weather, email, etc) and find the settings for notifications and set then one you want from within the app.
You can set a default notification tone for calls, messages, and alerts in the phone settings.
On most phones, if you go into your contacts, you can set different ringtones for different contacts if you want.
