The easiest method is to simply hook your phone up to your computer, copy them to your PC, then hook up the Eris after you have your new memory card in it, and copy them back.  If you aren't sure how to connect to a PC, plug it in via your data cable, on the phone pull down the notification window, click on the SD notificaiton, click on Mount.  It should then show up as a hard drive under your "My Computer" (in windows) just like a "USB Thumb drive".  You can then copy whatever you need.  Before disconnecting, pull down the notification bar again, and click the option to unmount the SD card.

The default locaiton where the camera stores it's pictures is under the "DCIM" folder and sub-folders.

If you are replacing the existing Eris memory card with the card from another phone, I would suggest formatting the card in the Eris once you have your pictures moved off of it.  Go to Settings --> SD Card and phone storage --> Unomount SD card --> Format

This will wipe all the old information from the card that was put there by your old phone and get it all "cleaned up" for your Eris.
