Just curious if when I am sending through iMessage if it counts towards texting?

Message bubble blue - does not count against SMS text, counts as data if on cellular, uses wifi if on wifi

Message bubble green - counts as SMS text, need cellular data signal for MMS (but does not count against data) (unless you are on wifi calling VZW Wi-Fi, and only then will it use wifi)

It counts as data unless you have it setup to send SMS instead of data when you can't connect to Apple servers.
