I upgraded to the Iphone 6 from a 4S. Set up and restore worked fine. However, when I am not on wifi, the phone reads 3G. How do I access the 4G LTE?

Make sure you have LTE enable for data in the settings.
Also, in some remote areas, they might not have LTE. My wife works in a small, and I mean very small town ( little community actually), and there hers shows 3G instead of LTE - everyone else so far, she gets LTE as do I ( when not on wifi).

Congratulations on your new iPhone 6! I can't wait to get mine, in a few weeks. But enough about me. Let's get your phone working on 4g LTE. WIll you try these steps?
Settings-cellular-Enable LTE
Make sure it shows as "Green" then its on.
At the same time make sure cellular data is showing "Green"
