iPhones disconnect from WiFI when they go into sleep mode, reverting to Mobile Data. Turning data off when not using the phone for long periods is a best practice.

What phone did you have before? How much data are you using vs how much are you expecting to use. Actual data has shown that going from 3G phone to LTE increases data usage by 2 to 2.5 fold.

I've had WiFi connected for the last 16 hours on my iPhone with cellular data enabled and my iPhone has not used any cellular data. If their using cellular data then that means their wifi isn't reliable so it fell back to cellular data.
