Buying iPhone on plan for use on another carrier

Hi there,
I am currently a long-time Verizon subscriber, and I use Samsung devices that I buy off plan, so I'm able to buy phones on-plan with my family lines. I have a work account with Fi, and I'd like to get an iPhone for that, but I can't purchase an iPhone on-plan with Fi.
So, my question is, can I buy an iPhone on-plan at Verizon and move it to my Fi account? If I recall, I would have to wait 60 days to transfer it, for starters. But also, since there is the whole eSIM thing, when I get the iPhone and turn it on, is it going to take over my Verizon line that I purchased it on?
If anyone has any advice or tips on how best to do this, I'd appreciate it. Thank you!
