Is there anyway to look at recent text messages and numbers after being deleted?

Deleting a needed message is never a fun thing to have to deal with. Once it is deleted from your device it is gone. There is not an option to recover it. You may always check your iCloud to see if you had them saved. You would have needed to backed up to iTunes previously: http://apple.co/1Ugi4iz
If not, you may always view the mobile numbers you text in your My Verizon account online. Once signed in go to My Usage->Messages->Message Log at bottom for current usage. If it was from a previous billing cycle, you would go to that bill.
