I'd like to recycle my iPhone 6 and get a 6s plus but I would only do so if I can effectively end my current contract but I'm not sure if recycling does this. thanks for anyone's help!

No recycling does not void your contract. You are under contract until the end date so if you recycle your current phone you will continue to be under contract

And, if you recycle the phone, you'll need a phone in the meantime.

No, you can buy one full price at any time. You just get no subsidy since you are under contract and cannot buy one on a device payment plan either.
