If I set the phone restrictions to just accept calls from those in my contact list, do the blocked callers go straight to voicemail? Or do they get disconnected or get a busy signal...or something else?

@Mincer,
That's a great question and you've come to the right place for answers! I know how important is it to make sure you're only getting calls from the people you know or want.
Are you referring to numbers you have on your blocked list or numbers not on your contact list http://vz.to/MqEgqB?
Calls from numbers that are on your blocked list are sent to voicemail when they call.
When you set your phone to only receive calls from numbers in your contacts lists, all other calls go straight to voicemail.
I trust this has fully answered your concerns. I'm here if you need further assistance.
