How much would I save dropping service and just streaming? Anybody done this?

Are you asking about disconnecting your mobile service and using your phone or tablet on WiFi only to stream media? I don't think modern devices will let you use them without a service plan any longer - you'll be stuck with a "need to activate" screen.
If you are using Fios for watching TV, I don't know what that costs since we don't have Fios in this area, but a "live TV" streaming package runs about $90/month from various streaming service providers.
