For each email I receive on my desktop, I receive it 5-10 timeson my Curve. I use Exchange Server so my emails automatically sync. I have taken to Verizon store and they could not figure it out. I also have subfolders for my Inbox and the subfolders do not sync. There has to be something set wrong in my email set up. Any ideas?

RIM servers only pull email from the direct inbox, you will not be to get mail items that are subfolders.
You should talk to the administrator or your Exchange Server to see why there's so many copies being sent to you. You may need to have them delete and re-add your email account.
