As a vegetarian for the last six years, I know that many people don't want to hear about a vegetarian lifestyle. They will insist that they like meat too much and they would never be able to live with bacon or chowing down on a big steak. Do I get offended by statements like that? Absolutely not! I firmly believe that everyone is entitled to eat whatever diet they chose! While I never try to force my beliefs on anyone, I would like to mention that a vegetarian lifestyle isn't all about salads and tofu. Therefore, I have decided to share one of my favorite meat-free dishes which is Butternut Squash Mac n' Cheese! While macaroni and cheese is typically a vegetarian dish, this is a good way to incorporate a vegetable into a familiar dish. It's an easy and delicious way to get some vegetables into your diet and would work extremely well for a Meatless Monday dinner!
