Not sure if that's because you're on an eSIM, your phone is an older generation model, or if that's just a disclaimer to get Verizon out of having to guarantee everyone's phone will work everywhere outside the US on an international service plan. It'll be more tedious, but depending on where you're traveling, you could do some internet searching on what wireless technology is used in the countries you're visiting and then look up the specs on your phone to see if it supports said tech.
If you're going to be overseas for an extended period, it's more cost effective to sign up with a local carrier in the other country than to use an international service plan, as there are lots of loopholes in the international plan based upon what I've read elsewhere in the forums with things like calling landlines not being covered, not all overseas carriers having agreements with Verizon so if you happen to use their network, it won't be covered, and other stuff...
