Does anybody know why when I go to write an email (gmail account), when I am have finished composing my message, it says "respond inline"? The buttons on the top of the email format look different, too. Not sure what I did to cause this! It didn't use to look like this or say this.

It almost sounds like you have the newest version of the gmail app loaded on your phone. It was released to the Market within the last week or two. Did you download an update for it recently?
