Is there a way with the Droid X to Select all to delete images from the gallery?

I am not familiar with the gallery on the Droid X. However you can select all pictures in a folder using a file explorer application from the Market. Astro or Estrongs are some of the more well known ones.
You can also use the file explorer application to then send all the pictures to email or delete all of them. I personally have used a file explorer application to copy paste a folder of pictures onto my computer through the wifi connection. This is without using the USB cable to connect the phone to the computer.
