Missing shortcut in Gingerbread

I have always had a shortcut button on my home screen that when touched gave me icons for every installed program on my phone. I can not find it since Gingerbread. I can not even remember what it was called. Where do I go to get it back and what's its name?

When on the recent screen, in the upper left you will see an icon the looks like a clockface indicating 3 o'clock.  Touch it and 3 icons show up...

  • All apps
  • Recent
  • downloaded

select "All apps" and you will see all the apps your phone has installed.

Since GB I have a square with a triangle in it as the far right soft icon. That opens a screen that says recent. The hard key on the right gives me search.

This is what you are looking for, GB added a feature to group your apps as you like with this option..
