Yes you should uncheck it because if you are out and about and not near a router you will not be able to recieve or send any emails from the account listed. With it unchecked it will use 3G when wifi isnt availible.

If you open a photo from the Gallery and press the phone Menu button (far left in portrait, bottom right in landscape) and a menu of options will appear at the bottom of the photo. Press "Share" and select the email account to send it to.
The same is true for videos. Press the phone Menu button before pressing Play. Share option appears.
I prefer managing all files with an app called Astro File Manager. It allows you to create custom folders and has a "Multi" button for deleting multiple files at a time.
I don't use the stock File Manager but, from app drawer or homescreen, open "Files" and choose:
Files/Phone Files/Folder (you want to delete photos and/or videos from). Press phone Menu button and "Select Multiple" on the bottom to select more than one file.

Sounds like you may have selected "Quick Upload" instead of Share and Email because email does not show any status information like uploading...
By chance did you check the Sync over Wi-Fi only option under Messages > Left Menu > Message Settings > Email > Email Delivery > Sync over Wifi Only.

Well at first thought this is all I can think of that would cause this type of issue, by chance when you attempt to connect to send the file are you making sure you are selecting send by email from list because the option for wifi and uploading sounds like you are using the Quick Upload option because it does show this info.
Try checking the default email account and make sure you are using the right one to send on... Goto Messaging > Left Menu > Messages Settings > Email > Default Email Account > Select the account that is configured to be able to send on by default... This will tell the system to automatically use that account to send all quick emails...
Hope this helps..

All you have to do is click on image and select Share < Email and add contact information and click send but it is really easier to just connect phone to PC and drop top status menu and select SD Mass Storage option, this way you can copy all files quickly to the PC.
Lastly how do I Delete unwanted Images and Videos like a few at a time?
You can also do this from Mass Storage option but if you want to do it from the device you can open the default file browser to stored location and click Left Menu > Select Multiple and then you can click all files you want to delete and then select Left Menu and Delete from list.
Hope this helps...
