Is there any way to add a 'signature'  to text messages so that the person receiving the text knows it's me without looking at the phone number? And one that is automatically added to the end of the text?!

If you open up your stock Text Message app and press your phone's menu button you'll be able to get into your "Message Settings".  From there you can find a "Message Signature" button.  Once that is checked you can select the "Edit Signature" right below it to enter in the signature that you want attached to your messages.
