how can i turn OFF the 3g/1x wireless service...

and leave ON the wifi connectivity...

 

will be in mexico and DO NOT want to incur any voice or data roaming charges...

and DO want to connect to the hotel wifi...

Put the phone in airplane mode. You can turn the wifi back on when you are in the range of any available networks.

Under the phone settings tap data management, then tap data delivery. Make sure the checkbox for Data Roaming is unchecked.
