If I do not enable the new SON feature, how can I place specific devices on the 5Ghz band or 2.4Ghz band. I want to maximize WiFi efficiency. Where do I go in the router software? Do I give each band a unique password?

Once you disable SON you will see two SSIDs. FiOS-XXXXX and FiOS-XXXXX-5G. There is no need to have different passwords unless you want. Just connect whatever devices that you want on 5GHz to the 5G SSID.
