I am planning to have the following setup for Fios internet only (200 or 300 Mbps):
ONT -> Ethernet cable -> MoCA adapter (Actiontec Bonded MoCA 2.0 Network Adapter ECB6200S02) -> Coax cable (previously carrying Spectrum internet) -> another MoCA adapter again (same model) -> G1100 router
Will Fios Tech person help me to setup the above?
I bought two MoCA adapters and the G1100 router. Anything else I need to buy?

A field tech would likely be reluctant to install anything that does not conform to the customary setup they received during the training. Nonetheless, it won't hurt to kindly ask them to do the setup you want.
As a side note, ECB6200 is bonded MoCA 2.0 and its controller chip is end of life and end of support. Using the setup you described above would cap you at 1Gbps throughput. If you were to upgrade to multigigabit speed tier in the future (not yet available), you would need to swap out those ECBs for better ones.
