I have a Verizon G3100 on the lower level of my home. I have a NVR for my security system that I want to install on the upper level of my home. Can I use a Verizon E3200 extender to connect the NVR via wi-fi to my home network?

You want to wireless backhaul the E3200 with G3100 and then connect an Ethernet cable between the E3200 and the NVR? If so, the answer is yes, though not recommended.

E3200 should be connected to G3100 via Ethernet or Coax, wireless through 5GHz low band is the last resort.

Hello, Thanks for the suggestion. Sorry, but I don't know what backhaul is. In any event,  I will get the E3200 and install on the upper level where I have a Fios coax drop. Thanks again
