I need to disconnect the service line, which was poorly placed, to do some digging along where the line runs to my house. Is just disconnecting the green plugs in the outside ONT box fine to do? And then plugging it back in won't cause any service issues? Thanks.

Should be fine. But don't get the tips of the fiber dirty or you may have signal issues.
