I have a tech question, My Fios is 150/150 so I have an ethernet cord connection instead of a coax going to my Verizon gateway/router. My question is, can I swap out my verizon router/gateway for a Router of my choosing instead of renting from verizon?

Yes you can but make sure it's capable of connecting see the below article

It refers to an actiontech but in any router you use you must first release the dhcp from the Verizon Fios and unplug it immediately. Then plug the Ethernet cable into your own provided router, then plug it into power. It should get a connection on startup.
some routers and yes even high end ones are not fully functional without the Verizon Fios router. I can only suspect the reason. But you could always use your own router in AP mode.

If you only have internet or TV w/o FiOS stub, the yes. Just release IP address before connecting new router.
If you have TV with FiOS stb, it requires some work to get them to work with other router.
