My Verizon G3100 router is in my home office. I'm trying to extend my Ethernet network to my family room where my Verizon DVR is located. Can I extend the network by connecting the coax wall jack in my family room to a coax splitter and the splitter to a E3200 and my Verizon DVR; and then connect one of the E3200 LAN ports to a network switch? Can I use a E3200 LAN port for that purpose?

Assuming your G3100 is connected to the coax for STBs, the answer is yes. E3200 is a 2-port ethernet switch. You can extend ports from it using a switch.
