The TV screen paused every minute, missing the whole program. After getting off DirectTV because of the signal pausing with their service, I have had FIOS since 2006 or 2007 without any issues. I upgraded to 1 gigs service with no problem until a couple of months ago, when sales suggested I upgrade to Steaming 3.0; watching TV has been a struggle since. The screen pauses every minute, missing the whole program in between pulsing. I called Verizon support and dispatched a tech to check for the problem. And replaced the Router, the extender, and the router connected to the Fiber Optic Cable from the telephone pole. It is still the same issue, and the techs cannot fix it.
Called Verizon for the third time, and support is sending tech to come out to repair it again. They also said that they could not switch me back to the old system. I am searching for outer service as well.

Stream TV on Fios is a relatively new item. Most techs are probably not quite up to speed on it yet unfortunately. I would believe if you called the billing department you should be able to go back to the older 4100 series Fios One boxes.

Yup, what you have is the horrible Fios TV+ service. Like you, I was told I could not switch to the normal setup, which worked perfectly well the times I had it in the past. So after a couple weeks of that glitchy Fios TV+ nonsense and their refusal to switch me back to Fios TV One, I left for Directv Stream and the experience has been exceptional.
