You can still switch back the classic view presently until it is retired permanently. Log in to the web mail and select "Classic View" on the top right near the search feature.

I have the classic view. I liked the New version, believe it or not. We lost it when they had problems with a microsoft update and we were switched back to classic. We never got new E mail page back!!!
I am not sure why it didn't switch back for you. It did for me. Perhaps some servers in some areas haven't gotten the necessary updates. They're used to be a way to ask for the new mail format, but I don't think its there anymore.
