We may have lost a few days worth of Emails in our Outlook Express reader. Is there any chance I can retrieve Emails that have been downloaded already? Maybe the server backs up a few days worth and keeps them available for problems?

No. Once mail is deleted from Verizon's servers, nothing short of a court order will recover it.
