Why does my incoming messages get cut off. Is there a limit on how many characters are allowed?

I believe there is still a character limit. I think it used to be 160 characters per simple SMS message and is 1600 characters with modern phones & modern carrier networks. Anything over that is typically split up and will be displayed as 2 (or more) messages on your end.
