The main home screen on the stock Pixel Launcher is always the same, can't change it. You can add more home screens to the right, but the one on the left is always the main home screen. It's the same on most phones running stock Android. You could try a different launcher, there are many good launchers available in the Play Store which provides more home screen customization.
