Is there a way through the Fios App or on a browser to schedule downtime for the router. Would love to shutdown and start automatically to save energy at night.

No.
You could put it on a timer or smart home socket. But the timer/socket might use as much energy over 24 hours as you'd save during the few hours the router is turned off. You may also run into problems if you have devices that expect to have always-on connections and you could shorten the lifespan of the router.
You'll save much more power by adjusting your thermostat by a degree or two, and/or replacing old appliances with new energy efficient ones.

How much energy do you save by shutting it down?
Don't forget the cost expenditure of buying a timed socket. Shutting down a router at night for 75 days save $1. If you buy a $20 smart socket, then that's worth 4 years of leaving the router on.
