We want to use smart phone overseas only for internet and for taking pictures. How do we turn off the phone/text, so that we aren't charged for using it?

Keep the phone in Airplane mode for the entire trip and turn on wifi only when you have access to a wifi hotspot

I understand the importance of staying connected. As Ann154 mention you can put the phone in Airplane Mode, so the phone will not connect to a local carrier's tower. This will limit you to WiFi for Internet. Were you wanting to be able to use cellular data while you are traveling? What country will you be in?
