We have a vacation home and would like to install a cam for an occasional snapshot; streaming not required. There is no computer at that location, but we can leave a Verizon Jetpack hotspot there.
Is it possible where, from a different location, I could connect to the camera through the hotspot and obtain a current snapshot of the view? If so, recommendations?

There are two problems, first and most important is the VZW device needs to have a public facing static IP address. There's only two ways to get one, you need a business account to purchase one or one comes with LTE Internet (Installed).
Next, a Jetpack is not designed to do as you require, a more appropriate device is the 4G LTE Broadband Router with Voice. There is also a U620L USB Modem plugged into a third party 3G/4G router. Both require a business account to get a static IP address.
Another option is to find a provider that offers a static IP address as part of the service agreement.
