I want to buy sim cards while in the UK and France. Will I be able to just simply buy and insert in place of my Verizon sim card or is there more to this process? I have an iPhone 6s.

That sounds like an exciting trip to Europe. Using a local SIM card is an excellent option to save on paying for cellular service while traveling. It's very easy to get a local SIM card, most airports even have vending machines that provide SIM cards. Once you have your card, make sure to turn WiFi off on your phone then power off before switching your SIM card: http://vz.to/2sNNx6r . Then power back up and you will be set to go on your new network.
