Hi!
I will be traveling to Tahitit. I have unlimited texting and calling internatinally to Mexico and Canada. However I do not have an international plan beyond that. Does this mean Verizon will charge international rates for texting from Tahiti or wifi calling?

Tahiti appears to be part of French Polynesia, included in the International Calling Plans but not in the TravelPass option: International Cell Phone, International Service | Verizon Wireless

You might look at this thread regarding WiFi calling from International locations. Calling a US number may not incur charges but calling a local International number may: Airplane mode and WiFi - Europe. Pay as You Go rates if you don't have TravelPass or an International Calling Plan appears to include French Polynesia with a per call/text rate.
