Do not want to delete exchange email on server (just phone)

I just synched up my new razr maxx to my work exchange server.

Problem is, when I delete email on phone, it deletes in on the server - I do not want that, and apparently the android exchange settings do not provide for deleting on the phone only (like I used to do on my BB)

I am new to using phone apps, can I replace the standard android phone app with something else (I have seen in the discussions using K9 or touchdown)?

Touchdown has that option. It is a great app and worth the money.
