You are probably using an incorrect "White Balance" setting. I've had that happen when it was set for Incandecent lighting but was actually in a room using CFL (flourecent) lights.
Thanks Highspeed. You may try to reset the phone (which will not remove any data or apps that you may have) by holding the up volume and pressing power at the same time until the Xoom resets.
