Can someone tell me how I can either print screen or create a file of my text messages. I have many work discussions that I need to document, but do not know how to make them into a file. Please help. Thank you

I'm sure there are other methods, but this is what I use.
SMS Backup & Restore from Google Play Store to backup my SMS to an XML file.
Copy that file and the sms.xsl to my PC
Use smsBackupReader (a java app) to read the file and save a file in txt format. You must have Java installed on your PC to use this.
http://sourceforge.net/projects/smsbackupreader/
Or just open the xml file in Internet Explorer. View and print from there.

SMS BackUp is the simplest solution. I use it for the same exact reason and it has worked better than other apps

You could long press on the sms message you want to preserve, copy and paste it into a text editor app to document it. You could store it on a cloud storage document that you could access/edit from either your device or PC.
