When I hit the search button to bring up the mic and say text Joe, I won't be home, it puts everything in the message area and won't put Joe's name in the to area. I've tried using different contact names and none appear in the to line.

Congrats on your new phone sheryltoo! I love my Maxx, I'm sure you will too. There's actually a few different ways to use voice commands on the phone. The best way to include both the command to send the text, the person's name, and the message itself would be the way you described. Tap the magnifying glass > Tap the microphone. If you have Joe in your phone book with anything else (for example, he's saved in your phone as Joe Smith, etc) try saying "send text to Joe Smith" pause for a very short moment then "I won't be home".
The voice detection isn't perfect, but you can help Google improve the recognition of your voice commands by going to Settings > Language & input > Voice Search.
