Can I retrieve deleted text messages?

Is there a way to retrieve text messages that I've already deleted.

Unless you had them backed up somewhere, they are gone.  You might try SMS Backup and Restore from the Play Store to avoid this in the future.

Don't call providers keep records of all text? If so how do I go about getting them to release them.

You can review the text message log of your devices online on your My Verizon.
