How do I check my hotspot usage? I don’t have a mobile hotspot, I’m simply using my phone’s hotspot to stream onto my smart tv YouTube and some Netflix videos. I would like to do away with my current WiFi carrier but I need to know how much usage I have throughout the week.

Should be under your data usage in My Verizon.
If you stream content on your TV regularly, I would not quit your WiFi provider, because streaming uses a lot of data. Depending on your phone plan, you may start getting throttled on data if you exhaust your "premium" data allotment, which would render your phone virtually unusable for any internet access at all.

You can see how much of the hotspot data you are using in the phone data settings.
