If I have a string of 100 messages in a thread, perhaps I want to protect a single response but delete the remainder of the thread. How does one do that in Hangouts?

Hate to say it, Jerry, but regarding HANGOUTS message, you delete or archive the entire thread, not one at a time. You can still delete individual SMS messages by long-pressing the message. There's no "delete everything BUT this", option, either.
