All of a sudden I see 1.35GB of data used on my phone as I'm sitting here at work. Could there be something in the background using data? I've never used over 2GB in a month and now, this month I've used over 8.

Yes. Go into your settings and click on data usage. It will list the apps and amount of data they have used.
That is a great suggestion from rcschnoor.
What were you able to find as the main data user?
We can understand how this may be mind boggling, but this great resource from the device can help.
You may also have apps running or if the free apps have ads scrolling, it will also increase the usage.
